At the beginning of the COVID outbreak in 2020, Bailey and her teenage daughter Alexis were bored and looking for something meaningful to keep themselves busy while stuck at home. Bailey, an entrepreneur with other start up experience, wanted to teach Alexis how to take an idea for a business and turn it into a reality. Alexis was particularly fond of baking and they wanted their business to produce something that would make people happy. Having lived in Europe before moving to Madison Alabama, Bailey and Alexis were familiar with how an authentic Belgian Liege Waffle should look and taste. And they realized there was nobody else making and selling them in their community. They knew this was a perfect opportunity and began experimenting and perfecting their recipe until they had it just right. Others who sampled the waffles loved them! Bailey then coached Alexis through the process as she obtained all of the required business licenses, permits, tax ID, etc. and Wafel Bitte (translation: Waffle Please) was born!. Although Alexis is now away serving in the United States Air Force, Bailey and a team of others continue to operate and grow the business and are now packaging the Belgian Liege Waffle Mix so customers can make them hot and fresh in their home.

Because waffle makers differ, first refer to your manufacturer instructions.
What we have found helpful is using a good pan spray on both sides of the waffle maker prior to adding the batter. The best we have used thus far is Kitchen Essentials pan coating spray. Steam cleaning our waffle makers has been the most successful.

It is best to let the batter rise for an hour and a half before cooking the waffles.
You can also make the batter and let it rise overnight in the refrigerator. Cover it with plastic wrap making sure the wrap touches the top of the batter.
Yes, the waffle mix contents need to be used in a single batch because it is yeast based. However, the waffles keep well in the refrigerator or freezer.
Although best when fresh, waffles can be stored in an airtight container at room temperature for a day or two, for up to a week in the refrigerator, and longer in the freezer. When you are ready to eat them, we recommend reheating in a toaster oven or conventional oven at 275 degrees F for minutes until warm.
You can still use your mix, just replace the yeast packet with 2 teaspoons of active yeast.
